Sharing maintenance methods for sausage smoking ovens

The smoking oven is the core equipment in sausage production, and regular maintenance is crucial. Daily maintenance is essential.
1、 Daily maintenance (after each use)
This is the most basic and important maintenance, aimed at removing residues generated on the day, preventing corrosion and cross contamination.
Power off cooling: Before operation, be sure to turn off the power, steam source, and gas source to ensure that the internal temperature of the furnace body drops to a safe level before cleaning.
Internal cleaning:
Remove residue: Use a soft brush or scraper to remove cigarette ash, oil stains, meat shavings, and sausage crumbs from the furnace walls, hanging rods, trays, and nozzles.
Wipe the inner wall: Use a soft cloth soaked in neutral cleaning agent (such as diluted detergent) to wipe the inner wall of the furnace body, door seal, and sensor probe, and then use a damp cloth with clean water to wipe off any remaining cleaning agent.
Cleaning the smoke generator: Empty and thoroughly clean the smoke tray or smoke generator to remove old sawdust and ash.
Drainage inspection: Check if the drainage holes and grooves at the bottom of the furnace are blocked, and rinse them with hot water to ensure that the condensate can be discharged smoothly.
External cleaning: Wipe the exterior of the equipment and control panel with a damp cloth to maintain cleanliness. Attention: When cleaning the control panel, the cloth should be twisted very dry to prevent water from entering.
Door seal inspection: Quickly check whether the furnace door sealing strip is intact and free of cracks to ensure its good sealing performance.
2、 Weekly maintenance
Perform more thorough cleaning and functional checks.
Deep cleaning: Conduct a more thorough cleaning of the furnace, especially the corners and flue outlets that are difficult to clean normally.
Check the nozzle/fan: check whether the circulation fan runs smoothly without abnormality, and check whether the nozzle of the humidification spray system is blocked (if any, use a fine needle to dredge).
Sensor calibration check (rough): Observe whether the temperature and humidity values displayed on the control panel are stable and reasonable after the equipment is preheated. If there is a serious deviation, it is necessary to contact professional personnel for calibration.
3、 Monthly/Quarterly Maintenance
Conduct inspections and preventive maintenance on key components.
Electrical inspection: After the power is cut off by a professional electrician, check whether the power supply wiring terminals are loose, aged, or burnt.
Pneumatic system inspection (if applicable): Check if there is any air leakage at the pneumatic component's air pipe joint and if the filter needs to be drained.
Maintenance of circulating fan: Check the fan motor for any abnormal noise and whether the bearings need to be filled with high-temperature lubricating oil.
Pump and valve inspection: Check if the water pump, solenoid valve, steam valve, etc. are working properly and if there are any leaks.
Comprehensive inspection of sealing: Carefully inspect the sealing strip of the furnace door. If there is aging, deformation, or damage, replace it immediately. This is the key to ensuring the smoking effect and energy consumption.
