In the field of food processing, freeze-drying technology for fruits and vegetables is like a magical magic that seals the color, flavor, and nutrition of fresh fruits and vegetables, bringing people a healthy and delicious taste that can be enjoyed all year round.
The application process of freeze-drying technology for fruits and vegetables begins with careful selection. Only fruits and vegetables with suitable maturity and excellent quality will be selected, such as red strawberries, crispy, sweet and juicy apples, and green and tender spinach. They embarked on this special 'journey' with the fresh scent of the fields.
The selected fruits and vegetables need to be pre treated. Cleaning is the process of removing soil, impurities, and pesticide residues from the surface to ensure the purity of fruits and vegetables. Next, divide the fruits and vegetables according to their different characteristics, such as cutting apples into small pieces and carrots into thin slices, which can make them more evenly heated and have a better drying effect during the subsequent freeze-drying process. Some fruits and vegetables that are prone to oxidation and discoloration, such as potatoes and pears, also need to be soaked in a solution containing antioxidants to prevent browning and maintain their original color.
After the preprocessing is completed, it enters the critical freezing stage. Quickly place the processed fruits and vegetables into a freezer at -30 ℃ to 40 ℃, allowing them to freeze into a solid state in a short period of time. This process is like pressing a 'pause button' on fruits and vegetables, allowing the water inside the cells to form small and uniform ice crystals, reducing damage to the cell structure and preserving the original taste and nutritional content of the fruits and vegetables. For example, frozen blueberries preserve their plump flesh and abundant anthocyanins intact.
The frozen fruits and vegetables immediately enter a vacuum environment, embarking on a journey of sublimation drying. In a vacuum state, by precisely controlling the temperature, ice crystals are directly sublimated into water vapor and discharged. At this time, the temperature is generally controlled between 50 ℃ and 70 ℃, which ensures drying efficiency and avoids the impact of high temperature on the nutrition and flavor of fruits and vegetables. With the continuous extraction of water vapor, fruits and vegetables gradually become dry and crispy, and the originally soft and tender strawberries become sweet and delicious dried strawberries. Taking a bite is full of rich fruit aroma.
After reaching the predetermined dryness level, final treatment is still required. Some frozen fruits and vegetables are packed with nitrogen to isolate oxygen, further extending their shelf life while maintaining their good taste. These packaged freeze-dried fruit and vegetable products are very convenient for daily snacks, baking, and brewing beverages.
The application of freeze-drying technology for fruits and vegetables not only allows us to taste their deliciousness during non fruit and vegetable seasons, but also greatly preserves the nutrients such as vitamins, minerals, and dietary fiber in fruits and vegetables. It breaks the limitations of time and space, presenting the gifts of nature in a new form, meeting people's needs for healthy and convenient food, and opening up new paths for the development of the fruit and vegetable industry, allowing more high-quality fruits and vegetables to enter a broader market and bringing consumers more diversified food experiences.
